Chocolate Chip Cookies - GF, SoyFree, Egg free, Dairy Free, Vegan

The biggest critic in our family thinks these are delicious. They are fast and easy: a delicious after dinner snack.
Ingredients
- 1 cup almond meal
- 1 tsp vanilla
- 4 drops Stevia
- 1 tsp baking soda
- 1/4 cup coconut oil (or butter if dairy is not a sensitivity)
- 1/2 cup Lindt's 85% dark chocolate bar (no soy!) cut into chards.
Instructions
- Melt coconut oil. Add stevia, and vanilla and mix. Add almond meal and mix. Add dark chocolate chards/pieces into mixture.
- Drop onto greased cookie pan (Be careful of olive oil spray - soy is in the spray!).
- Bake at 350 for 10 minutes.
- Enjoy warm with a glass of rice or almond milk.
